‘Like many busy mothers I find time to be a very precious commodity. Between juggling the school run, shopping, ironing, cleaning the house and walking the dogs, there is little time left in the day to prepare a wholesome evening meal. Yet, as every housewife knows, when your husband comes home from a day’s work, he expects something delicious and nutritious to be served.

‘I have found a wonderful vegetable available in our local Montecito organic emporium that many people might not have come across – yet is has proved to be a real blessing in the kitchen.

‘Called spaghetti, it comes in two varieties – fresh or dried. Personally, I always prefer farm to fork fresh and luckily we have a local producer who delivers their spaghetti straight from the ground. A brief rinse in mineral water and then a quick dip into lightly boiling salted water makes this a tasty and easy to serve mid-week dish. For an exotic touch, you might like to drizzle a little olive oil and garnish with some freshly torn flat-leaf parsley.

‘If you cannot obtain freshly dug spaghetti, you can, of course opt for dried, although I find it slightly brittle, and it requires a long soak in water prior to cooking.

‘There is another closely guarded secret that I am happy to pass on to time-pressed mums. “Batch cooking”might sound complicated and time-consuming, but let me tell you it has been a real revelation.

‘Prepare a much larger portion of a particular meal that you enjoy, and rather than throwing away what you don’t use immediately – which is incredibly wasteful – I divide it into what I call “portions” and pop them in the freezer to use at a later date. With this simple trick you can stir up a culinary storm in your air fryer whenever you fancy it – simples!’
